Chickpea And Bean Stew With Sweet Potato Spaghetti
Makes 4 portions

1 can chickpeas
1 can red beans
1/2 red onion
2 garlic cloves
2 cups tomato sauce
1/2 cup water
1 yellow squash
1 red pepper
1/2 pack sweet potato corn spaghetti
Salad of own choice

This delicious stew literally takes like 10-15 minutes to make, and is fantastic as dinner after a long and exhausting day as it is rich in proteins and vitamins. 

Fry the squash, red pepper, onion and garlic on middle to high heat together with some olive oil. After about 5 minutes the vegetables should be nice and tender, and you can add the chickpeas and red beans. While it´s all cooking together, start cooking the spaghetti, which you can find in any whole food or health food market. Into the frying pan, add the tomato sauce and the water and give it a stir. Then finally have the spaghetti into the stew and top of with a bit of good quality oil and herbs.
