Sweet Fig And Red Cabbage Salad


Hi! I got to apologize for posting a bit less recipes in the last time. I have the exams this month, and need to prioritize that right now, and I really hope you understand. But, back on track, because more recipes are to come, so look ahead to see new photos and delicious recipes in the coming time! 

Norway had it´s national day yesterday, which was 17´th of May, where we usually eat ALOT of good classic hot dogs and enjoy innumerable amounts of ice cream. This year was pretty different though. Me and my family made a delicious salad brunch and "healthier" cakes and desserts. This salad was a surprisingly big success! The combination of sweetness, bitterness and freshness was amazing. It´s super nutritious too! 

Sweet Fig And Red Cabbage Salad
Serves 4

1/2 red cabbage
1 medium sized grape cluster
10 sugar peas
1 avocado
5 sweet figs
4 eggs
alpha sprouts

Rinse the red cabbage and slice it into thinner pieces. I like using a cheese slicer, because in that way the thickness of the cabbage is perfect. Place this in a mixing bowl, and add the grapes which already have been cut in half. Slice the sugar peas lengthwise, cut the avocado into cubes and cut the figs in four before adding it all to the bowl. Hard-boil the eggs - which will take about six minutes, and slice the eggs. Add the eggs into the salad and finally put on some alpha sprouts. Season with salt and a bit of pepper and enjoy!
